I'm planning on making a couple because it's part of a "set." But I think whatever you want to make, one or many is just fine. I know I'm not counting.

Same for me - I went with a few smaller things based on the games and what my ideas were, but I'd have no problem getting one thing :D

I believe the general idea is one thing or a set of one thing
so you could either do a bookmark with heaps of characters on it, or a set of bookmarks, each featuring a different character (for example)

Still waiting for my supplies to arrive :(

This has been answered in the posts above me but I will repeat it to be clear:

You can make ONE item or a SET of items (matching or non-matching, both are fine - this is a gift after all!)
If you make a set of things, they should all fit in an envelope together.

I also want to press on people that they don't have to send their items in the standard envelope we keep talking about; send them in bubble bags, boxes, manila envelopes or whatever you want!

This is good - mine will fit in an envelope, but I doubt it would make it to it's destination without being totally destroyed....

It would be really sad if all somebody got was an envelope full of broken bits! I'm thinking bubble mailer...

I'm making 3 different kinds of items from 3 different games. It's all about personal preference.

Yeah I'm hoping to make multiple things but they're not really a set.... You can't stop me, I already started! -grabs her supplies and runs-

I'm assuming I'l only get one thing in return and that's A OK with me. I've always been an over-achiever :P

Just thought I'd add the generic:

:zelda "It's the thought that counts." :zelda

and the surprise part. can't forget that.
